Sweet & Tangy Potato Salad
INGREDIENTS
- 3 lbs scrubbed, cubed red bliss potatoes
- 2 hardboiled eggs
- 1 tablespoon fresh chives
- 1 tablespoon fresh parsley
- 1/4 cup sour cream
- 2/3 cup mayonnaise
- 1/2 cup Old World Foods Marinated Peppers
- 1/4 cup Old World Foods Sweet Cucumber Salad + 1 tablespoon of juice
- 1 teaspoon Old World Foods French Style Mustard
- Salt, black pepper, and paprika to taste
DIRECTIONS
1. Boil potatoes until fork tender. Run potatoes under cool water and drain. Cut the potatoes into cubes.
2. Add cubed potatoes, chives, parsley, sour cream, mayonnaise, seasonings, and Old World Foods products to a large bowl. Mix until combined.
3. Cover tightly and store in the refrigerator for 4 hours. Serve chilled and enjoy!
