Marinated Pepper Linguine
INGREDIENTS
- 8 oz linguine, cooked al dente, 1/2 cup pasta water reserved
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 2 bacon slices, chopped into pieces
- Freshly ground black pepper to taste
- 3 garlic cloves, minced/crushed
- Pinch of chili flakes
- 1 heaping cup Old World Foods Marinated Peppers, drained and sliced
- 1 cup frozen peas
- 1/4 cup chicken broth
- 3 teaspoons Old World Foods French Style Mustard
- 1/4 cup grated parmesan
- Handful of basil leaves, chopped
- Walnut pieces, lightly toasted in a skillet or the oven
- Salt to taste
DIRECTIONS
1. Heat oil in a large skillet over medium heat. Add bacon and cook until crisp. Remove from pan with a slotted spoon or spatula and set aside.
2. Add a few grinds of black pepper, garlic, chili flakes, and onion to the skillet. Mix with oil and then cover, removing lid occasionally to stir, until onions are very soft but not yet caramelized, about 8-10 minutes.
3. Add linguine to a pot of salted water and cook until al dente. Drain and set aside, remembering to reserve some pasta water.
4. Add peas, peppers, and broth to the skillet with the onions and let simmer for a minute. Add drained pasta and toss. Add pasta water and parmesan and toss to combine.
5. Season with salt and pepper to taste. Top with a drizzle of olive oil, crispy bacon, toasted walnuts, basil, and more grated parmesan. Enjoy!
