Layered Beetroot Chickpea Salad

DIRECTIONS

1. Prepare the beetroot dressing. Blend diced baby beets, buttermilk, salt, lemon juice, jalapeno, and garlic cloves in a food processor or blender until smooth. Set aside.

2. Assemble the salad. In a jar or serving dish, start by pouring in the beetroot dressing and then layer the salad with diced feta cheese, diced tomatoes, chopped Persian cucumbers, diced baby beets, chopped red onions, chickpeas, marinated peppers, and chopped walnuts. Garnish with fresh cilantro.

3. Invert the salad onto a serving dish and mix well. Enjoy!
