Crispy Potato Sauerkraut Bites
INGREDIENTS
- 500g of peeled and steamed potatoes
- 1/2 teaspoon salt
- 2 tablespoons cornstarch
- 1 teaspoon garlic
- 1/4 teaspoon black pepper
- 1 whole egg
- 1 cup drained Old World Foods Polish Sauerkraut
- 1/3 cup Old World Foods Sliced Baby Beets
- Dip: 1/2 cup plain Greek yogurt and 1/4 cup Old World Foods Polish Style Mustard
- Coating: 1 whole egg, 3/4 cup seasoned panko
DIRECTIONS
1. Smash the cooked potato and mix in beets, saeurkraut, cornstarch, egg, and seasoning.
2. Form 11 balls with hands.
3. Beat an egg in a bowl and place the panko in another bowl.
4. Dip each ball into the egg and then coat completely in panko.
5. Place in airfryer and cook for 12 minutes at 385F.
6. Mix Polish Style Mustard and Greek yogurt in a bowl.
7. Serve the Crispy Potato Sauerkraut Bites with mustard dip. Enjoy!
